  • 1 large egg, lightly beaten
  • 1/2 cup shredded mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup low-sugar pizza sauce
  • Optional toppings: pepperoni slices, extra cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash the zucchini. Slice the zucchini into rounds about 1/4 to 1/2 inch thick. These form your mini pizza bases.
  3. Place the zucchini slices on a layer of paper towels. Sprinkle generously with salt. Let them sit for 10 minutes. This draws out excess moisture, which is key for crispy bites.
  4. Pat the zucchini slices completely dry using fresh paper towels. Discard the moisture.
  5. In a medium bowl, combine the dried zucchini, beaten egg, half of the mozzarella cheese, Parmesan cheese, oregano, and garlic powder. Season with pepper. Mix gently.
  6. Arrange the zucchini slices in a single layer on the prepared baking sheet.
  7. Spoon about 1/2 teaspoon of pizza sauce onto each zucchini slice.
  8. Top each slice with the remaining mozzarella cheese and any desired optional toppings like pepperoni.
  9. Bake for 12 to 15 minutes, or until the cheese is melted and bubbly and the zucchini edges are lightly browned.
  10. Serve immediately as a quick, healthy party food idea or meal prep snack.
