  • 2 cups grated zucchini
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions

  1. Grate the zucchini and place it in a bowl.
  2. Add the flour, egg, Parmesan cheese, salt, and pepper to the bowl with the zucchini.
  3. Mix everything together until well combined.
  4. Heat the olive oil in a skillet over medium heat.
  5. Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly into patties.
  6. Cook for 3-4 minutes per side, until golden brown and crispy.
  7. Remove the fritters from the skillet and drain on paper towels.
  8. Serve warm.
