A flavorful and hearty one-pot vegan dirty rice dish featuring Beyond Meat, the ‘holy trinity’ of Cajun cooking, and a spicy Creole seasoning blend. Perfect for a quick weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound Beyond Meat ground
  • 1 cup yellow onion, finely chopped
  • 1 cup green bell pepper, finely chopped
  • 1 cup celery, finely chopped
  • 3 cloves garlic, minced
  • 1 1/2 cups long-grain white rice, uncooked
  • 3 cups vegetable broth
  • 2 tablespoons Creole seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add Beyond Meat and cook, breaking it up with a spoon, until browned. Remove from skillet and set aside.
  2. Add onion, bell pepper, and celery to the skillet. Cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in the uncooked rice, Creole seasoning, smoked paprika, and cayenne pepper (if using). Cook for 1-2 minutes, stirring to coat the rice.
  4. Pour in the vegetable broth and bring to a boil. Return the cooked Beyond Meat to the skillet.
  5. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Fluff the rice with a fork. Season with salt and black pepper to taste.
  7. Garnish with sliced green onions before serving.

  • For a gluten-free version, ensure your Creole seasoning blend is gluten-free.
  • Adjust cayenne pepper to your preferred spice level.
