12 cups Chex cereal (a mix of Rice and Corn works well)
1 cup pretzel twists
1 cup pecan halves, toasted
1 cup semi-sweet chocolate chips
1 cup white chocolate chips
1 cup toffee bits
1 cup (2 sticks) unsalted butter
1 cup packed light brown sugar
1/4 cup light corn syrup
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
Instructions
Preheat your oven to 250 degrees F. Line two large baking sheets with parchment paper.
In a very large bowl, combine the Chex cereal, pretzels, and toasted pecans. Set aside.
In a medium saucepan, combine the butter, brown sugar, and corn syrup. Heat over medium heat, stirring constantly until the mixture boils. Once boiling, continue to cook for exactly 1 minute without stirring.
Remove the saucepan from the heat. Quickly stir in the vanilla extract, baking soda, and salt. The mixture will foam up.
Immediately pour the hot toffee mixture over the cereal mixture in the large bowl. Gently stir until all the cereal pieces are evenly coated.
Spread the coated cereal mixture in a thin, even layer onto the prepared baking sheets.
Bake for 30 minutes, stirring gently every 10 minutes to prevent burning.
Remove from the oven and let the mix cool completely on the baking sheets without stirring. This helps it become crunchy.
Once completely cool, break the mix into pieces. Place the cooled mix into a large bowl.
Add the toffee bits, semi-sweet chocolate chips, and white chocolate chips to the bowl. Gently toss everything together until the chips are distributed.
Store the finished snack mix in an airtight container at room temperature.
Notes
For a richer flavor, use a mix of pecans and walnuts in the recipe.
If you want a stronger caramel flavor, substitute 1/4 cup of the white chocolate chips with butterscotch chips.
