Make these ultimate loaded tater tot nachos, or totchos, for your next game day or casual gathering. They use crispy tater tots as the base, smothered in cheese, seasoned beef, and your favorite nacho toppings. This crowd-pleasing dish is quick and satisfying.

  • 1 bag (about 32 ounces) frozen tater tots
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1 cup water
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup prepared salsa
  • 1/4 cup sliced jalapeños (optional)
  • 1/2 cup cooked, crumbled bacon
  • 1/2 cup sour cream, for topping
  • 1/4 cup chopped fresh tomatoes, for topping

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Spread the frozen tater tots in a single layer on a large, rimmed baking sheet. Bake according to package directions until they are golden brown and crispy, about 15 to 20 minutes.
  2. While the tots bake, prepare the beef. Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
  3. Stir the taco seasoning mix and water into the ground beef. Bring the mixture to a simmer and cook until the liquid has mostly evaporated, about 5 to 7 minutes.
  4. Remove the crispy tater tots from the oven. Immediately sprinkle half of the cheddar cheese and all of the Monterey Jack cheese over the hot tots.
  5. Return the sheet pan to the oven and bake for 3 to 5 minutes, or until the cheese is fully melted and bubbly.
  6. Remove the pan from the oven. Distribute the seasoned ground beef evenly over the melted cheese layer.
  7. Top with the remaining cheddar cheese, salsa, sliced jalapeños, and crumbled bacon.
  8. Return the sheet pan to the oven for 2 more minutes, just long enough to melt the final layer of cheese slightly.
  9. Remove from the oven. Dollop with sour cream and sprinkle with fresh tomatoes before serving immediately.

Notes

  • For extra flavor, use pre-cooked, chopped brisket instead of ground beef for a unique twist on these game day appetizers.
  • If you prefer a creamier texture, substitute half of the shredded cheese with your favorite homemade queso recipe.
  • Baking the tots on a wire rack set over the baking sheet helps them stay crispier underneath.
