  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs, separated
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 cup chopped pecans
  • 1/4 cup packed light brown sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 2-quart casserole dish.
  2. In a large bowl, combine the mashed sweet potatoes, granulated sugar, melted butter, egg yolks, milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
  3. Whisk in the flour until just combined. Do not overmix.
  4. In a separate clean bowl, beat the egg whites until stiff peaks form.
  5. Gently fold one-third of the beaten egg whites into the sweet potato mixture to lighten it. Then, fold in the remaining egg whites until no white streaks remain. You want to keep the mixture airy.
  6. Pour the mixture into the prepared casserole dish.
  7. Prepare the topping: In a small bowl, combine the chopped pecans and brown sugar. Sprinkle this mixture evenly over the top of the souffle batter.
  8. Bake for 40 to 45 minutes, or until the souffle is puffed and the topping is golden brown.
  9. Remove from the oven and let it cool slightly before serving. The souffle will deflate as it cools, which is normal.

  • For the best texture, use fresh sweet potatoes cooked until very soft, rather than canned yams.
