A healthy twist on classic sloppy joes, served over roasted sweet potatoes for a satisfying weeknight meal.

Ingredients

  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium sweet potatoes, halved lengthwise
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sliced pickles, chopped red onion

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rub the cut sides of the sweet potatoes with olive oil and season with salt and pepper. Place them cut-side down on a baking sheet.
  3. Roast for 40-50 minutes, or until tender when pierced with a fork.
  4. While the sweet potatoes are roasting, brown the ground turkey in a large skillet over medium heat. Drain any excess fat.
  5. Add the chopped onion and bell pepper to the skillet and cook until softened, about 5-7 minutes.
  6. Stir in the minced garlic and cook for 1 minute more until fragrant.
  7. In a small bowl, whisk together the tomato sauce, ketchup, brown sugar, Worcestershire sauce, chili powder, salt, and pepper.
  8. Pour the sauce mixture over the turkey and vegetables in the skillet. Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until the sauce has thickened.
  9. Once the sweet potatoes are tender, carefully flip them over. Spoon the sloppy joe mixture into the hollowed-out sweet potato halves.
  10. Serve immediately with your favorite toppings.

Notes

  • For meal prep, cook the sloppy joe mixture and roast the sweet potatoes separately. Store in airtight containers in the refrigerator for up to 3 days. Reheat together before serving.
  • You can substitute ground beef or chicken for the ground turkey.
  • If you prefer a spicier sloppy joe, add a pinch of cayenne pepper or a dash of hot sauce to the sauce mixture.
