4 bone-in, skin-on chicken thighs
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
1 large yellow onion, thinly sliced
2 cloves garlic, minced
2 cups chicken broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1/4 cup chopped fresh parsley, for garnish
Instructions
Pat the chicken thighs dry with paper towels. In a shallow dish, combine flour, salt, and pepper. Dredge the chicken pieces in the flour mixture, shaking off any excess.
Heat the vegetable oil in a large skillet or cast iron pan over medium-high heat. Add the chicken pieces, skin-side down, and sear until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the sliced onion to the skillet and cook, stirring occasionally, until softened and lightly browned, about 8-10 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Sprinkle the remaining flour mixture over the onions and garlic. Stir well and cook for 1 minute.
Gradually whisk in the chicken broth and Worcestershire sauce until smooth. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet.
Return the chicken thighs to the skillet, nestling them into the gravy. Sprinkle with dried thyme.
Cover the skillet, reduce the heat to low, and simmer for 30-40 minutes, or until the chicken is cooked through and tender.
Remove the chicken from the skillet. If the gravy is too thin, increase the heat to medium and simmer uncovered for a few minutes until it reaches your desired consistency.
Serve the smothered chicken over rice or mashed potatoes, spooning plenty of onion gravy over the top. Garnish with fresh parsley.
Notes
For extra flavor, you can add a splash of heavy cream to the gravy at the end of cooking.
This dish pairs wonderfully with cornbread or a simple green salad.
