Crispy, juicy, and flavorful bone-in chicken thighs baked to perfection with a simple spice rub. This easy sheet pan recipe is ideal for weeknight dinners.

  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels. This helps the skin get crispy.
  3. In a small bowl, mix together the paprika, garlic powder, onion powder, thyme, salt, black pepper, and cayenne pepper (if using).
  4. Drizzle the olive oil over the chicken thighs and rub it in to coat.
  5. Sprinkle the spice mixture evenly over both sides of the chicken thighs, pressing it gently to help it stick.
  6. Place the seasoned chicken thighs on a baking sheet, ensuring they are not crowded.
  7. Bake for 35-45 minutes, or until the skin is golden brown and crispy, and the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for 5 minutes before serving.

Notes

  • For extra crispy skin, you can broil the chicken for the last 2-3 minutes of cooking, watching carefully to prevent burning.
  • Serve with your favorite Southern sides like mashed potatoes, collard greens, or cornbread.
