A hearty and warming slow cooker chicken stew, perfect for a comforting family meal with minimal effort.

  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup chopped yellow onion
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/2 cup cold water
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Place the chicken pieces in your slow cooker.
  2. Add the chopped onion, carrots, celery, and minced garlic to the slow cooker.
  3. Pour in the chicken broth.
  4. Stir in the dried thyme, dried rosemary, black pepper, and salt.
  5. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender.
  6. In a small bowl, whisk together the flour and cold water until smooth.
  7. Stir the flour mixture into the slow cooker.
  8. Cook on high for an additional 30 minutes, or until the stew has thickened.
  9. Stir in the frozen peas during the last 10 minutes of cooking.
  10. Serve hot, garnished with fresh parsley.

Notes

  • For a richer flavor, you can sear the chicken pieces before adding them to the slow cooker.
  • If you prefer a thicker stew, you can increase the amount of flour and water mixture.
  • Feel free to add other vegetables like potatoes or corn.
