- 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup chopped yellow onion
- 2 cups chopped carrots
- 2 cups chopped celery
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 cup all-purpose flour
- 1/2 cup cold water
- 1 cup frozen peas
- 2 tablespoons chopped fresh parsley, for garnish
- Place the chicken pieces in your slow cooker.
- Add the chopped onion, carrots, celery, and minced garlic to the slow cooker.
- Pour in the chicken broth.
- Stir in the dried thyme, dried rosemary, black pepper, and salt.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender.
- In a small bowl, whisk together the flour and cold water until smooth.
- Stir the flour mixture into the slow cooker.
- Cook on high for an additional 30 minutes, or until the stew has thickened.
- Stir in the frozen peas during the last 10 minutes of cooking.
- Serve hot, garnished with fresh parsley.

- For a richer flavor, you can sear the chicken pieces before adding them to the slow cooker.
