  • 1 medium onion, chopped
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup ketchup
  • 1/4 cup packed brown sugar
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional)
  • 1 (8.5 ounce) package corn muffin mix (like Jiffy)
  • Ingredients called for on the corn muffin mix box (usually milk and eggs)

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir in the tomato sauce, ketchup, brown sugar, mustard, Worcestershire sauce, chili powder, salt, and pepper. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally. This is your savory sloppy joe filling.
  4. Spread the sloppy joe filling evenly into the bottom of the prepared baking dish. If you are using cheese, sprinkle it evenly over the meat layer now.
