1 tablespoon olive oil
1 pound large shrimp, peeled and deveined
1 teaspoon salt
1/2 teaspoon black pepper
4 cloves garlic, minced
1 cup orzo pasta, uncooked
2 1/2 cups chicken broth
1/4 cup dry white wine, optional
1/2 cup grated Parmesan cheese
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley
1 tablespoon butter
Instructions
Heat olive oil in a large skillet over medium-high heat. Add shrimp, salt, and pepper. Cook for 1-2 minutes per side until pink. Remove shrimp from skillet and set aside.
Add minced garlic to the skillet and cook for 30 seconds until fragrant.
Stir in the uncooked orzo and cook for 1 minute, stirring constantly.
Pour in the chicken broth and white wine (if using). Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed.
Stir in Parmesan cheese, lemon juice, and butter until the cheese is melted and the sauce is creamy.
Return the cooked shrimp to the skillet and stir to combine. Cook for 1-2 minutes until the shrimp are heated through.
Stir in fresh parsley. Serve immediately.
Notes
For a richer flavor, use seafood broth instead of chicken broth.
Add a pinch of red pepper flakes for a touch of heat.
