Ingredients

Scale
  • 1 pound bulk pork sausage (or Italian sausage)
  • 1 large yellow onion, chopped
  • 4 celery stalks, chopped
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 cups dried bread cubes (about 1 standard loaf, cut into 1-inch pieces and dried overnight)
  • 1 cup chicken broth (plus more if needed)
  • 2 large eggs, lightly beaten
  • 1/2 cup (1 stick) unsalted butter, melted

Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the sausage, breaking it up with a spoon, until it is fully browned. Drain off excess grease.
  3. Add the chopped onion and celery to the skillet with the sausage. Cook until the vegetables soften, about 5 to 7 minutes.
  4. Stir in the dried sage, thyme, rosemary, salt, and pepper. Cook for 1 minute until the herbs are fragrant. Remove the skillet from the heat.
  5. In a very large bowl, combine the dried bread cubes and the sausage and vegetable mixture. Toss gently to distribute the ingredients evenly.
  6. In a separate small bowl, whisk together the chicken broth and the lightly beaten eggs. Pour this mixture over the bread and sausage mixture. Toss everything together until the bread is evenly moistened. Add a little more broth if the mixture seems too dry.
  7. Transfer the stuffing mixture to the prepared baking dish. Drizzle the melted butter evenly over the top of the stuffing.
  8. Bake for 35 to 45 minutes, or until the top is golden brown and crispy and the center is heated through.
  9. Let the sausage stuffing rest for 10 minutes before serving. This is a must-try homemade stuffing for your turkey dinner.

Notes

  • For a make-ahead stuffing recipe, prepare the entire dish through step 6, cover it tightly, and refrigerate for up to 24 hours. Before baking, let it sit at room temperature for 30 minutes, then proceed with baking, adding 5 to 10 minutes to the baking time if necessary.
  • If you prefer cornbread sausage stuffing, substitute half of the dried bread cubes with dried cornbread cubes.
  • This recipe works well as a turkey side dish or a comfort food casserole baked separately.
