Crispy, caramelized Brussels sprouts roasted with savory bacon on a single sheet pan. This easy vegetable side dish is perfect for weeknight dinners or holiday meals.

Ingredients

  • 1.5 pounds Brussels sprouts, trimmed and halved
  • 8 ounces bacon, chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 2 tablespoons balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
  3. Spread the Brussels sprouts in a single layer on a baking sheet, cut-side down if possible.
  4. Scatter the chopped bacon over the Brussels sprouts.
  5. Roast for 20-25 minutes, or until the Brussels sprouts are tender and caramelized, and the bacon is crispy. Stir halfway through.
  6. If using, drizzle with balsamic glaze before serving.

Notes

  • For extra crispy sprouts, ensure they are dry before tossing with oil.
  • Cut larger sprouts in half again for even cooking.
  • Bacon fat will render and help crisp the sprouts.
