1 lb boneless, skinless chicken breast, cut into 1-inch cubes
1 tablespoon olive oil
3 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon paprika
2 tablespoons fresh parsley, chopped
Instructions
Season the cubed chicken pieces evenly with salt, pepper, oregano, basil, and paprika.
Heat the olive oil and 1 tablespoon of the butter in a large skillet over medium-high heat.
Add the seasoned chicken to the hot skillet in a single layer. Cook for 5 to 7 minutes, turning occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside.
Reduce the heat to medium-low. Add the remaining 2 tablespoons of butter to the same skillet.
Add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Return the cooked chicken bites to the skillet. Toss everything together to coat the chicken completely in the garlic butter sauce.
Stir in the fresh parsley. Cook for 1 more minute.
Serve the chicken bites immediately over rice, pasta, or with a side of vegetables.
