Easy, one-bowl pumpkin bars topped with a thick, creamy cream cheese frosting. These moist spiced pumpkin bars are perfect for fall gatherings and can be made ahead.

  • 15 oz pumpkin puree
  • 3 large eggs
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • For the Frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the pumpkin puree, eggs, granulated sugar, and vegetable oil until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bars cool completely in the pan on a wire rack.
  8. While the bars are cooling, prepare the frosting. In a medium bowl, beat the softened cream cheese and butter together until smooth.
  9. Beat in the vanilla extract.
  10. Gradually add the powdered sugar, beating until the frosting is light and fluffy.
  11. Once the pumpkin bars are completely cool, spread the cream cheese frosting evenly over the top.
  12. Cut into bars and serve.

Notes

  • Store leftover pumpkin bars in an airtight container in the refrigerator for up to 3 days.
  • These bars can be baked a day in advance and frosted just before serving.
  • For a thicker frosting, you can add more powdered sugar, a tablespoon at a time, until you reach your desired consistency.
