3 lb boneless pork shoulder roast
1 (32 ounce) bag sauerkraut, drained
2 medium yellow onions, thinly sliced
2 large apples (like Honeycrisp or Fuji), cored and sliced
1/4 cup brown sugar, packed
1 tablespoon caraway seeds
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup chicken broth
Instructions
Place the sliced onions in the bottom of your slow cooker.
Place the pork roast on top of the onions. Season the roast evenly with salt and pepper.
In a bowl, mix the drained sauerkraut, sliced apples, brown sugar, and caraway seeds.
Spoon the sauerkraut mixture evenly over the top of the pork roast.
Pour the chicken broth around the edges of the roast in the slow cooker.
Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the pork is fork-tender.
Remove the pork roast and shred it using two forks. Return the shredded pork to the slow cooker and stir it into the sauerkraut mixture.
Serve this hearty pork and sauerkraut hot, perhaps with mashed potatoes or rye bread.

If you prefer a thicker sauce, remove the pork and simmer the remaining liquid on the stovetop until it reduces slightly.
