Make these sweet and nutty pecan pie balls without turning on your oven. This simple recipe captures the classic flavor of pecan pie in a perfect, bite-sized treat ideal for holiday gifting or parties.

  • 1 cup powdered sugar
  • 1/2 cup cream cheese, softened
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips (for coating)
  • 1 tablespoon coconut oil (optional, for smoother coating)

Instructions

  1. Place the finely chopped pecans in a dry skillet over medium heat. Toast for 3 to 5 minutes, stirring constantly, until fragrant. Remove from heat and let cool completely.
  2. In a medium bowl, beat the softened cream cheese until smooth.
  3. Add the powdered sugar, cooled toasted pecans, corn syrup, vanilla extract, and salt to the cream cheese mixture. Mix on low speed until just combined, then increase speed to medium and beat until the mixture forms a thick, uniform dough.
  4. Cover the bowl and chill the dough in the refrigerator for at least 30 minutes to make rolling easier.
  5. Line a baking sheet with parchment paper. Scoop the chilled dough using a small cookie scoop or spoon and roll it into 1-inch balls. Place the balls on the prepared baking sheet.
  6. Chill the rolled balls for another 15 minutes while you prepare the chocolate coating.
  7. In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth.
  8. Dip each chilled pecan pie ball into the melted chocolate, allowing excess chocolate to drip off. Return the coated balls to the parchment-lined sheet.
  9. Refrigerate the chocolate-covered pecan pie balls for at least 1 hour, or until the chocolate is firm.
