  • 2 cups cooked, shredded chicken breast
  • 1 pound potato gnocchi
  • 2 cups fresh spinach, roughly chopped

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Whisk in the flour until it forms a thick paste with the vegetables. Cook for 1 minute, stirring constantly.
  4. Slowly pour in the chicken broth while whisking constantly to prevent lumps. Bring the mixture to a simmer.
  5. Stir in the Italian seasoning, thyme, pepper, and salt. Let the soup simmer for 5 minutes, allowing the broth to thicken slightly.
  6. Reduce the heat to low. Stir in the heavy cream until fully combined and the broth is creamy. Do not let the soup boil after adding the cream.
  7. Add the shredded chicken and the potato gnocchi to the pot. Cook according to the gnocchi package directions, usually about 3 to 5 minutes, until the gnocchi float to the surface.
  8. Stir in the fresh spinach until it wilts into the soup, about 1 minute.
  9. Taste and adjust salt and pepper as needed before serving hot.
