1 small yellow onion, finely chopped
2 cloves garlic, minced
1 1/2 cups long-grain white rice (Basmati recommended)
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
2 1/4 cups vegetable broth
1/4 cup pine nuts
2 tablespoons fresh parsley, chopped
Instructions
Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Add the rice, turmeric, cumin, salt, and pepper to the saucepan. Stir constantly for 2 minutes to toast the rice and spices lightly.
Pour in the vegetable broth. Bring the mixture to a boil.
Once boiling, immediately reduce the heat to low, cover the saucepan tightly, and simmer for 15 minutes without lifting the lid.
Remove the saucepan from the heat and let it stand, covered, for 10 minutes. Do not lift the lid during this resting period.
While the rice rests, toast the pine nuts in a small, dry skillet over medium-low heat until golden brown, watching carefully to prevent burning.
Fluff the rice gently with a fork. Stir in the toasted pine nuts and fresh parsley. Serve warm.
Notes
For a brighter flavor, add 1 tablespoon of fresh lemon juice when you fluff the rice at the end.
