  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Fresh basil for garnish

Instructions

  1. Season the chicken breasts on both sides with salt, pepper, and garlic powder.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Sear the chicken breasts for 5 to 7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  6. Stir in the heavy cream, chopped sun-dried tomatoes, and Italian seasoning. Bring the sauce to a gentle simmer.
  7. Reduce the heat to low and stir in the grated Parmesan cheese until the sauce is smooth and thickened. Do not let the sauce boil once the cheese is added.
  8. Return the chicken breasts to the skillet, spooning the sauce over them. Simmer for 2 minutes to heat the chicken through.
  9. Garnish with fresh basil before serving. Serve immediately over pasta or with crusty bread.
