1 tablespoon olive oil
1 pound kielbasa sausage, sliced
1 large onion, chopped
2 cloves garlic, minced
4 cups chicken broth
2 cups cubed potatoes (about 1 pound)
1 cup milk
1/2 cup shredded cheddar cheese (optional)
Salt and pepper to taste
Instructions
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add kielbasa and cook until browned, about 5 minutes. Remove kielbasa and set aside, leaving drippings in the pot.
Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
Pour in chicken broth and add potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
Stir in milk and return the browned kielbasa to the pot. Heat through, but do not boil.
If using, stir in cheddar cheese until melted and smooth.
Season with salt and pepper to taste.
Notes
For a thicker soup, mash some of the cooked potatoes against the side of the pot, or mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the simmering soup.
