One Pot Italian Sausage Soup

A hearty and creamy one pot Italian sausage soup with potatoes and kale, perfect for a quick weeknight dinner or a cozy fall meal. This recipe is meal prep friendly and comes together in about 30 minutes.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 medium Yukon Gold potatoes, peeled and diced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup heavy cream
  • 2 cups chopped kale, tough stems removed
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage with a slotted spoon and set aside, leaving drippings in the pot.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  3. Pour in chicken broth and add diced potatoes and Italian seasoning. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until potatoes are tender.
  4. Stir in the cooked Italian sausage and red pepper flakes (if using).
  5. Reduce heat to low and stir in heavy cream and chopped kale. Cook for 2-3 minutes, until kale is wilted.
  6. Season with salt and pepper to taste.
  7. Ladle soup into bowls and top with grated Parmesan cheese before serving.

Notes

  • For a milder soup, omit the red pepper flakes.
  • You can substitute spinach for kale if preferred.
  • This soup can be made ahead and reheated. Store in an airtight container in the refrigerator for up to 3 days.
