A quick and creamy one-pot soup featuring Italian sausage, tender gnocchi, and fresh spinach, perfect for a comforting weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (16.5 ounce) package shelf-stable gnocchi
  • 3 cups fresh spinach
  • 1/2 cup heavy cream
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage with a slotted spoon and set aside, leaving drippings in the pot.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  3. Pour in chicken broth and diced tomatoes (with their juice). Stir in Italian seasoning, salt, and pepper. Bring to a simmer.
  4. Add the gnocchi to the simmering broth. Cook according to package directions, usually 3-5 minutes, until they float to the surface.
  5. Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
  6. Return the cooked sausage to the pot. Stir in the heavy cream and heat through, but do not boil.
  7. Ladle soup into bowls and serve immediately, topped with grated Parmesan cheese.

Notes

  • For a spicier soup, use hot Italian sausage.
  • If you don’t have shelf-stable gnocchi, you can use refrigerated or frozen, adjusting the cooking time as needed.
  • Add other vegetables like chopped carrots or celery with the onion for extra flavor and nutrients.
