Cook a juicy, tender turkey breast quickly in your Instant Pot. This recipe is perfect for weeknight dinners or a stress-free holiday meal, and includes instructions for making gravy from the pot drippings.

Ingredients

Scale
  • 1 (4-6 lb) bone-in turkey breast
  • 1 cup chicken broth or water
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch (for gravy)

Instructions

  1. Pat the turkey breast dry with paper towels.
  2. In a small bowl, mix together thyme, rosemary, garlic powder, onion powder, salt, and pepper. Rub this seasoning mixture all over the turkey breast.
  3. Set the Instant Pot inner pot on a trivet. Pour 1 cup of chicken broth or water into the bottom of the pot.
  4. Carefully place the seasoned turkey breast on the trivet, skin-side up.
  5. Secure the lid and set the valve to sealing. Cook on High Pressure for 55 minutes (for a 5 lb breast). Adjust time by 10 minutes per pound for larger or smaller breasts.
  6. When cooking time finishes, allow a Natural Pressure Release (NPR) for 15 minutes, then carefully quick release any remaining pressure.
  7. Remove the turkey breast and tent it loosely with foil. Let it rest for 10 minutes.
  8. To make gravy, carefully pour the liquid from the Instant Pot into a saucepan, leaving behind any large solids. Skim off excess fat if desired.
  9. In a small bowl, whisk the cornstarch with 3 tablespoons of cold water to create a slurry.
  10. Bring the liquid in the saucepan to a simmer over medium heat. Whisk in the cornstarch slurry until the gravy thickens. Season with salt and pepper to taste.
  11. Slice the turkey breast and serve immediately with the homemade gravy.

Notes

  • For crispier skin, you can briefly place the cooked turkey breast under a preheated broiler for 3-5 minutes after resting. Watch it closely to prevent burning.
  • If you are cooking a boneless turkey breast, reduce the pressure cooking time by about 15 minutes.
  • This recipe works well for cooking a turkey breast from frozen; add 15 minutes to the pressure cooking time.
