A quick and flavorful weeknight chicken dish featuring a sweet and spicy hot honey glaze, savory crumbled feta, and tender baked chicken. Perfect for a high-protein dinner.

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/4 cup hot honey
  • 2 tbsp crumbled feta cheese
  • 1 tbsp chopped fresh parsley (optional garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry with paper towels. In a bowl, toss the chicken with olive oil, garlic powder, onion powder, black pepper, and salt until evenly coated.
  3. Place the seasoned chicken in a baking dish or on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  5. During the last 5 minutes of baking, brush the chicken generously with hot honey.
  6. Remove the chicken from the oven. Sprinkle crumbled feta cheese over the top.
  7. Let the chicken rest for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

  • For crispier chicken, you can broil it for the last 1-2 minutes after glazing and adding feta, watching carefully to prevent burning.
  • Serve this hot honey feta chicken over a bed of greens for a salad, or with rice or quinoa for a complete bowl.
  • Adjust the amount of hot honey to your spice preference.
