1.5 lbs boneless, skinless chicken breasts or thighs
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
1/4 tsp salt
1/4 cup hot honey
2 tbsp crumbled feta cheese
1 tbsp chopped fresh parsley (optional garnish)
Instructions
Preheat your oven to 400°F (200°C).
Pat the chicken dry with paper towels. In a bowl, toss the chicken with olive oil, garlic powder, onion powder, black pepper, and salt until evenly coated.
Place the seasoned chicken in a baking dish or on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
During the last 5 minutes of baking, brush the chicken generously with hot honey.
Remove the chicken from the oven. Sprinkle crumbled feta cheese over the top.
Let the chicken rest for a few minutes before serving. Garnish with fresh parsley if desired.
Notes
For crispier chicken, you can broil it for the last 1-2 minutes after glazing and adding feta, watching carefully to prevent burning.
Serve this hot honey feta chicken over a bed of greens for a salad, or with rice or quinoa for a complete bowl.
