A make-ahead breakfast casserole perfect for holidays or brunches, featuring hash browns, eggs, and cheese.

  • 1 (32 ounce) package frozen hash brown potatoes, thawed
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 8 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Spread the thawed hash browns evenly in the bottom of the prepared baking dish.
  3. Sprinkle the cooked sausage, shredded cheeses, and chopped onion over the hash browns.
  4. In a separate bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  5. Pour the egg mixture evenly over the ingredients in the baking dish.
  6. Cover the dish with plastic wrap and refrigerate overnight, or for at least 4 hours.
  7. Preheat your oven to 350 degrees F (175 degrees C).
  8. Remove the plastic wrap and bake for 45-55 minutes, or until the eggs are set and the top is golden brown.
  9. Let stand for 10 minutes before slicing and serving.

Notes

  • For a spicier dish, add a pinch of cayenne pepper to the egg mixture.
  • You can substitute other cooked meats like bacon or ham for the sausage.
  • Add your favorite vegetables like bell peppers or spinach for extra flavor and nutrients.
