Make the popular grinder salad at home. This recipe chops up classic Italian sub ingredients like deli meats, provolone cheese, and crisp lettuce, tossing them in a tangy, creamy dressing. It is a quick, low-carb meal inspired by the viral TikTok trend.

Ingredients

Scale
  • 1 head iceberg lettuce, finely chopped
  • 1/2 cup salami, chopped
  • 1/2 cup ham, chopped
  • 1/2 cup turkey breast, chopped
  • 1 cup provolone cheese, cubed or chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup banana peppers or pepperoncini, sliced
  • 1/4 cup grape or cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • 1/4 cup croutons (optional)
  • 2 tablespoons grated Parmesan cheese (for topping)
  • For the Dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup red wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the dressing: In a small bowl, whisk together the mayonnaise, red wine vinegar, olive oil, oregano, garlic powder, onion powder, salt, and pepper until smooth. Set aside.
  2. Prepare the meats and cheese: Dice or chop the salami, ham, turkey, and provolone cheese into bite-sized pieces, similar in size to the chopped lettuce.
  3. Chop the vegetables: Finely chop the iceberg lettuce. Slice the red onion, banana peppers, and olives. Halve the tomatoes.
  4. Combine salad components: In a large bowl, combine the chopped lettuce, prepared meats, provolone cheese, red onion, banana peppers, tomatoes, and olives.
  5. Dress the salad: Pour the prepared dressing over the salad ingredients.
  6. Toss well: Gently toss everything together until all ingredients are evenly coated with the dressing.
  7. Serve immediately: Divide the grinder salad among bowls. Top each serving with croutons, if using, and a sprinkle of grated Parmesan cheese.

Notes

  • For a lower-carb option, omit the croutons.
  • You can substitute iceberg lettuce with romaine for a slightly crisper texture.
  • If you prefer a creamier dressing, add one tablespoon of mayonnaise to the dressing mixture.
  • This recipe is great for meal prepping; store the dressing separately and combine just before eating.
