  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, sliced (for baking)

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper to create the marinade.
  2. Place the chicken in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish.
  3. Refrigerate the chicken for at least 30 minutes, or up to 4 hours, to allow the flavors to penetrate.
  4. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with parchment paper.
  5. Remove the chicken from the marinade, letting excess drip off. Arrange the chicken pieces on the prepared baking sheet. Place lemon slices on top of or around the chicken.
  6. Bake for 20 to 25 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the juices run clear.
  7. Remove from the oven and let the chicken rest for 5 minutes before serving.
