Make this addictive, buttery graham cracker toffee with just five simple ingredients. This recipe delivers a shatteringly crisp base topped with rich chocolate, perfect for quick holiday treats or satisfying a sweet craving without needing a candy thermometer.

Ingredients

Scale
  • 1 sleeve graham crackers (about 13 full sheets)
  • 1 ¼ cups unsalted butter
  • 1 ¼ cups packed dark brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with aluminum foil and place the graham crackers in a single layer on the prepared sheet.
  2. In a medium saucepan, combine the butter and brown sugar. Bring the mixture to a boil over medium heat, stirring constantly. Boil for exactly one minute.
  3. Remove the saucepan from the heat and stir in the vanilla extract.
  4. Pour the hot toffee mixture evenly over the graham crackers, spreading it to cover them completely.
  5. Bake for 5 minutes. The toffee should be bubbly.
  6. Remove the sheet from the oven and immediately sprinkle the chocolate chips evenly over the hot toffee. Let the chocolate sit for 5 minutes to soften.
  7. Spread the melted chocolate across the toffee layer using an offset spatula.
  8. Place the baking sheet in the refrigerator for at least 1 hour, or until the chocolate is completely firm.
  9. Break the cooled toffee into irregular pieces. Store leftovers in an airtight container.

Notes

  • For a salty finish, sprinkle flaky sea salt over the melted chocolate before chilling.
  • You can substitute milk chocolate or dark chocolate for the semi-sweet chips.
  • For a crunchier texture, add ½ cup of chopped pecans or almonds over the chocolate before chilling.
