Make this easy one-pan Garlic Parmesan Chicken and Potatoes for a satisfying, flavorful weeknight dinner. Tender chicken and roasted potatoes cook together with a rich garlic and Parmesan coating, minimizing cleanup.

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into uniform pieces
  • 1.5 lbs baby potatoes, halved or quartered
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the potatoes, olive oil, half of the minced garlic, Italian seasoning, salt, and pepper. Toss until the potatoes are evenly coated.
  3. Spread the seasoned potatoes in a single layer on the prepared baking sheet.
  4. In the same bowl, toss the chicken pieces with the remaining half of the minced garlic and a drizzle of olive oil (about 1 tablespoon).
  5. Arrange the chicken pieces among the potatoes on the baking sheet, ensuring everything has space to roast.
  6. Bake for 15 minutes.
  7. Remove the pan from the oven. Sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.
  8. Return the pan to the oven and bake for another 10 to 15 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the potatoes are tender and golden brown.
  9. Garnish with fresh parsley before serving this delicious chicken dinner.

  • For crispier potatoes, ensure they are cut into similar sizes and are not overcrowded on the pan.
