A quick and flavorful skillet steak recipe perfect for a date night dinner, featuring a rich garlic butter pan sauce.

  • 1 (12-16 ounce) ribeye or New York strip steak
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/4 cup heavy cream, 2 tablespoons grated Parmesan cheese

Instructions

  1. Pat the steak dry with paper towels. Season generously on both sides with salt and black pepper.
  2. Heat olive oil in a cast iron skillet over medium-high heat until shimmering.
  3. Carefully place the steak in the hot skillet. Sear for 3-4 minutes per side for medium-rare, or adjust time for your desired doneness.
  4. Reduce heat to medium. Add butter, minced garlic, and thyme to the skillet.
  5. As the butter melts, tilt the skillet and use a spoon to baste the steak with the garlic butter for 1-2 minutes.
  6. Remove steak from skillet and let it rest on a cutting board for 5-10 minutes.
  7. Optional: If making a pan sauce, pour off excess fat from the skillet. Return skillet to medium heat. Add heavy cream and Parmesan cheese. Stir until thickened.
  8. Slice the steak against the grain and serve immediately, spooning the pan sauce over the top if desired.

  • For a more intense garlic flavor, add an extra clove or two of garlic.
