1.5 lbs sirloin steak, cut into 1-inch cubes
1.5 lbs baby potatoes, halved or quartered
6 tbsp unsalted butter
4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
1 tsp salt
0.5 tsp black pepper
2 tbsp olive oil
Instructions
Toss potatoes with olive oil, salt, and pepper.
Heat a large cast-iron skillet over medium-high heat. Add potatoes in a single layer. Cook for 10-12 minutes, stirring occasionally, until browned and tender.
Push potatoes to one side of the skillet. Add steak cubes to the empty side. Sear for 2-3 minutes per side until browned.
Reduce heat to medium. Add butter, minced garlic, rosemary, and thyme to the skillet. Stir until butter is melted and fragrant.
Toss steak and potatoes in the garlic butter sauce until evenly coated. Cook for 1-2 minutes more.
Serve immediately.
Notes
For extra crispy potatoes, parboil them for 5 minutes before tossing with oil and seasoning.
You can substitute sirloin steak with other tender cuts like ribeye or filet mignon.
Add a splash of white wine or lemon juice to the sauce for extra flavor.
