Ingredients

Scale
  • 8 quarts prepared tomatoes (about 5 lbs), peeled, cored, and chopped
  • 1 1/2 cups chopped onions (about 1 large)
  • 1 cup chopped green bell peppers (about 2 medium)
  • 1 cup chopped red bell peppers (about 2 medium)
  • 46 jalapeño peppers, finely chopped (optional, adjust to taste)
  • 6 cloves garlic, minced
  • 2 tablespoons salt
  • 2 tablespoons ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon black pepper
  • 1/4 cup bottled lime juice or lemon juice

Instructions

  1. Prepare your water bath canner, jars, lids, and bands. Sterilize jars and lids. Keep jars hot.
  2. In a large pot, combine chopped tomatoes, onions, green bell peppers, red bell peppers, jalapeño peppers (if using), and minced garlic.
  3. Add salt, cumin, oregano, and black pepper. Stir well.
  4. Bring the mixture to a boil over medium-high heat, stirring occasionally.
  5. Reduce heat and simmer for 10 minutes.
  6. Stir in the bottled lime juice or lemon juice.
  7. Ladle the hot salsa into hot jars, leaving a 1/2-inch headspace. Remove air bubbles.
  8. Wipe jar rims clean and place lids and bands on jars. Tighten bands fingertip tight.
  9. Process jars in the water bath canner for 15 minutes (adjust for altitude if necessary).
  10. Turn off heat, remove canner lid, and let jars sit in the canner for 5 minutes before removing them to a towel-lined surface to cool completely.
  11. Check seals after 12-24 hours. Properly sealed jars can be stored in a cool, dark place for up to a year.

Notes

  • For best results, use firm, ripe tomatoes. Roma or paste tomatoes work well.
  • Adjust the amount of jalapeño peppers to control the heat level. Remove seeds and membranes for less heat.
  • Ensure your canning equipment is clean and in good working order for safe preservation.
  • Always follow tested canning guidelines for safety.
