1 (16.3 ounce) can refrigerated biscuit dough, cut into quarters
1 pound ground beef or Italian sausage
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 cup chopped onion (optional)
1 (24 ounce) jar pizza sauce
1 1/2 cups shredded mozzarella cheese, divided
1/2 cup shredded Parmesan cheese
1/2 cup mini pepperoni slices (or more, to taste)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large skillet over medium heat, cook the ground beef or sausage with the Italian seasoning and garlic powder until the meat is fully browned. Drain off any excess grease. If using onion, add it during the last few minutes of cooking until soft.
In a large bowl, combine the cooked meat mixture, pizza sauce, and half of the mozzarella cheese. Stir gently to mix.
Arrange the quartered biscuit pieces evenly across the bottom of the prepared baking dish.
Pour the meat and sauce mixture over the biscuit pieces. Spread it out so the dough is mostly covered.
Sprinkle the remaining mozzarella cheese and all of the Parmesan cheese over the top layer. Scatter the pepperoni slices over the cheese.
Bake for 20 to 25 minutes, or until the biscuits are cooked through and the cheese is melted and bubbly.
Let the casserole cool for 5 minutes before you serve it.
Notes
For a make-ahead option, assemble the entire casserole, cover it tightly, and refrigerate for up to 24 hours before baking. Add 5 to 10 minutes to the baking time if cooking directly from the refrigerator.
You can easily customize this with your favorite pizza toppings like sliced mushrooms, bell peppers, or black olives. Add vegetables before the final layer of cheese.
