Make these sweet and savory roasted honey glazed carrots. They are simple to prepare, caramelize well, and make a perfect side dish for weeknight dinners or holiday feasts.

  • 1.5 lbs carrots, peeled and cut into uniform pieces
  • 3 tablespoons unsalted butter
  • 3 tablespoons honey
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Place the cut carrots on the prepared baking sheet.
  3. In a small saucepan over low heat, melt the butter.
  4. Add the minced garlic to the melted butter and cook for about 30 seconds until fragrant. Do not let the garlic brown.
  5. Remove the pan from the heat. Stir in the honey, brown sugar, salt, pepper, and thyme until the mixture is smooth.
  6. Pour the glaze mixture over the carrots and toss well until every piece is evenly coated.
  7. Spread the carrots in a single layer on the baking sheet.
  8. Roast for 20 to 25 minutes, tossing halfway through, until the carrots are tender and the glaze is caramelized and glossy.
  9. Serve immediately as a delicious side dish.

Notes

  • For extra flavor, substitute half the honey with maple syrup.
  • If you prefer baby carrots, adjust the roasting time down by about 5 minutes.
