This recipe transforms green cabbage into a tender, savory dish with crispy edges, flavored with garlic and Parmesan cheese. It is a simple, low-carb side dish perfect for busy weeknights.

  • 1 medium head green cabbage (about 3 lbs)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper for easy cleanup.
  2. Remove any tough outer leaves from the cabbage. Cut the head of cabbage into 8 equal wedges, keeping the core intact so the leaves hold together.
  3. In a small bowl, mix the olive oil, minced garlic, salt, and pepper.
  4. Brush the garlic oil mixture evenly over all sides of the cabbage wedges.
  5. Place the wedges cut-side down on the prepared baking sheet.
  6. Roast for 20 minutes.
  7. Remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese evenly over the top of each wedge.
  8. Return the cabbage to the oven and roast for another 5 to 10 minutes, or until the edges are slightly caramelized and the cheese is melted and golden.
  9. Remove from the oven, garnish with fresh parsley, and serve immediately.

  • For a richer flavor, you can substitute half of the olive oil with melted butter.
  • If you prefer a softer texture, cover the wedges loosely with foil for the first 20 minutes of roasting.
