  • 1 (15 ounce) can cream-style corn
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup chopped green onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips or crackers, for serving

Instructions

  1. Combine the drained whole kernel corn, cream-style corn, cheddar cheese, Monterey Jack cheese, mayonnaise, sour cream, green onion, cilantro, chili powder, and cumin in a medium bowl.
  2. Mix all ingredients together until they are fully combined and creamy.
  3. Season the mixture with salt and pepper to your preference.
  4. To serve cold, transfer the dip to a serving bowl and chill for at least 30 minutes before serving with chips or crackers.
  5. To serve warm (baked method): Transfer the mixture to a small, oven-safe skillet or baking dish. Bake at 375°F (190°C) for 15 to 20 minutes, or until the cheese is melted and the edges are lightly golden.
  6. Serve the warm dip immediately with your preferred dippers.
