Make these simple, sweet, no-bake coconut balls with a rich chocolate coating. This recipe uses few ingredients and delivers a melt-in-your-mouth treat perfect for parties or quick desserts.

  • 14 ounces sweetened condensed milk
  • 3 cups shredded coconut, unsweetened or sweetened
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional, for smooth dipping)

Instructions

  1. In a medium bowl, combine the sweetened condensed milk, shredded coconut, and vanilla extract. Mix well until everything is evenly coated.
  2. Roll the mixture into small, uniform balls, about 1 inch in diameter. You should get about 20 to 24 balls.
  3. Place the formed balls on a baking sheet lined with parchment paper.
  4. Chill the coconut balls in the refrigerator for at least 30 minutes to firm up. This step is important before dipping.
  5. While the balls chill, prepare the chocolate coating. Place the chocolate chips and coconut oil (if using) in a microwave-safe bowl.
  6. Microwave in 30-second intervals, stirring in between, until the chocolate is smooth and fully melted.
  7. Remove the chilled coconut balls from the refrigerator. Dip each ball into the melted chocolate, ensuring it is fully coated. You can use two forks to roll it in the chocolate.
  8. Return the coated balls to the parchment-lined sheet.
  9. Refrigerate the chocolate coconut balls for another 15 to 20 minutes, or until the chocolate shell is set.
  10. Serve these easy coconut treats immediately or store them in an airtight container in the refrigerator.

Notes

  • For a healthier bite, you can substitute some of the sweetened condensed milk with a natural sweetener like maple syrup, though the texture will change slightly.
  • If you want a different flavor, try adding 1/4 cup of finely chopped nuts to the coconut mixture.
  • These homemade coconut candy bites freeze well. Place them in a freezer-safe container for up to three months.
