  • 1 1/2 teaspoons baking powder

  • 1/2 cup milk
  • 2 cups peeled, cored, and diced apples (about 3 medium apples)
  • 1 teaspoon ground cinnamon
  • For the Streusel Topping: 1 1/2 cups all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
  • For the Vanilla Glaze: 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
  2. Prepare the apples: In a small bowl, toss the diced apples with 1 teaspoon of cinnamon. Set aside.
  3. Make the cake batter: In a medium bowl, whisk together the 1 3/4 cups flour, baking powder, and salt. Set aside.
  4. In a large bowl, beat the softened butter and 1 cup granulated sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined; do not overmix.
  6. Gently fold the cinnamon-coated apples into the batter. Pour the batter into the prepared baking pan and spread evenly.
  7. Make the streusel topping: In a separate bowl, combine the 1 1/2 cups flour, brown sugar, granulated sugar, and 1 teaspoon cinnamon.
  8. Cut in the cold butter pieces using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  9. Sprinkle the streusel topping evenly over the cake batter.
  10. Bake for 45 to 55 minutes, or until a wooden skewer inserted into the center comes out clean.
  11. Let the cake cool in the pan on a wire rack for 15 minutes.
  12. Make the glaze: Whisk together the powdered sugar, 2 tablespoons milk, and 1/2 teaspoon vanilla extract until smooth. Add more milk, a half teaspoon at a time, if the glaze is too thick.
  13. Drizzle the vanilla glaze over the slightly cooled cake. Let the glaze set before slicing and serving.

Notes

  • Use firm, slightly tart apples like Granny Smith for the best texture and flavor contrast.
  • For a richer crumb, substitute half of the all-purpose flour in the streusel with almond flour.
  • If you prefer an apple cider flavor, replace the milk in the glaze with apple cider.
