A classic 1980s Midwest potluck salad with seasoned beef, Catalina dressing, and crunchy Doritos. This recipe includes tips for making it ahead to prevent sogginess.

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 head iceberg lettuce, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup crushed Nacho Cheese Doritos
  • 1 cup Catalina dressing
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/2 cup corn, drained
  • 1/2 cup refried beans, warmed

Instructions

  1. Cook ground beef in a skillet over medium heat. Drain grease and stir in taco seasoning. Cook according to seasoning packet directions. Let cool.
  2. In a large bowl, layer the shredded lettuce, cooked ground beef, shredded cheese, cherry tomatoes, black olives, and corn.
  3. Just before serving, add the crushed Doritos and drizzle with Catalina dressing. Toss gently to combine.
  4. Serve immediately. For make-ahead, keep dressing and Doritos separate until serving.

Notes

  • For a lighter version, substitute ground turkey for beef.
  • To make ahead, layer all ingredients except Doritos and dressing in an airtight container. Add dressing and Doritos just before serving to maintain crunch.
  • Consider this a great option for meal planning or as a side for weeknight dinners.
