A simple dump-and-go slow cooker recipe for tender chicken in a creamy sun-dried tomato and Parmesan sauce, perfect for weeknights.

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1/2 cup chicken broth
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 4 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, chopped (for garnish)

Instructions

  1. Place chicken in the bottom of your slow cooker.
  2. In a bowl, whisk together the cream of chicken soup, chicken broth, sun-dried tomatoes, Italian seasoning, garlic powder, and black pepper.
  3. Pour the soup mixture over the chicken.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  5. About 30 minutes before serving, stir in the softened cream cheese and grated Parmesan cheese until the sauce is smooth and creamy.
  6. Serve the marry me chicken over your favorite pasta, rice, or potatoes. Garnish with fresh basil if desired.
