Enjoy the rich, savory flavor of classic French onion soup with the ease of your slow cooker. This recipe features deeply caramelized onions in a flavorful broth, topped with crusty bread and melted Gruyere cheese.

  • 4 lbs yellow onions, thinly sliced
  • 1/2 cup unsalted butter
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp sugar
  • 1/2 cup dry sherry or white wine (optional)
  • 8 cups beef broth
  • 2 bay leaves
  • 1 sprig fresh thyme
  • 1 baguette, sliced 1-inch thick
  • 1 1/2 cups shredded Gruyere cheese

Instructions

  1. Place sliced onions in your slow cooker. Add butter, salt, pepper, and sugar. Stir to combine.
  2. Cook on low for 8-10 hours or on high for 4-5 hours, until onions are deeply caramelized and tender.
  3. Stir in sherry or white wine, if using, and scrape up any browned bits from the bottom of the slow cooker.
  4. Add beef broth, bay leaves, and thyme. Stir well.
  5. Cook on low for another 1-2 hours, or until soup is heated through and flavors have melded. Remove bay leaves and thyme sprig.
  6. Preheat your broiler.
  7. Ladle soup into oven-safe bowls. Top each bowl with a slice or two of baguette.
  8. Generously sprinkle shredded Gruyere cheese over the bread.
  9. Place bowls on a baking sheet and broil for 2-4 minutes, or until cheese is melted and golden brown. Watch carefully to prevent burning.
  10. Serve immediately.

Notes

  • For an even deeper flavor, you can caramelize the onions on the stovetop for 30-45 minutes before adding them to the slow cooker.
  • If you don’t have oven-safe bowls, you can toast the bread slices separately, top with cheese, and broil until melted, then float them on top of the soup.
  • Feel free to use other cheeses like Swiss or Provolone if Gruyere is unavailable.
