- 2 pounds ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can pinto beans, drained and rinsed
- 1 (4 ounce) can diced green chilies
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 1 cup beef broth
- Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Transfer the beef and onion mixture to your slow cooker.
- Stir in the crushed tomatoes, kidney beans, black beans, pinto beans, and diced green chilies.
- Add the chili powder, cumin, smoked paprika, and cayenne pepper (if using). Season with salt and black pepper.
- Pour in the beef broth and stir everything to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors have melded and the chili is heated through.
- Taste and adjust seasonings as needed before serving.
Notes
- For a thicker chili, uncover the slow cooker for the last 30 minutes of cooking.
- Serve with your favorite toppings such as shredded cheese, sour cream, chopped onions, or cornbread.
- This chili freezes well. Let it cool completely, then store in airtight containers for up to 3 months.
