A simple and creamy slow cooker chicken recipe perfect for weeknights, served over angel hair pasta.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 (1 oz) packet Italian dressing mix
  • 1 (8 oz) block cream cheese, softened
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 12 oz angel hair pasta, cooked
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place chicken breasts in the bottom of your slow cooker.
  2. Sprinkle the Italian dressing mix evenly over the chicken.
  3. In a medium bowl, mix together the softened cream cheese and chicken broth until smooth.
  4. Pour the cream cheese mixture over the chicken.
  5. Stir in the grated Parmesan cheese and black pepper.
  6. Cover and cook on low for 4-6 hours, or until the chicken is cooked through and tender.
  7. Remove chicken from the slow cooker and shred it using two forks.
  8. Return the shredded chicken to the slow cooker and stir to coat it in the sauce.
  9. Serve the creamy chicken mixture over cooked angel hair pasta.
  10. Garnish with fresh chopped parsley before serving.

  • For a thicker sauce, you can leave the lid off the slow cooker for the last 30 minutes of cooking.
