  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. Season the chicken breasts on both sides with salt, pepper, garlic powder, and Italian seasoning.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Add the chicken breasts to the hot skillet and sear for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken from the skillet and set it aside on a plate.
  4. Reduce the heat to medium. Add the minced garlic and chopped sun-dried tomatoes to the same skillet. Cook for about 1 minute until the garlic is fragrant.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  6. Stir in the heavy cream and bring the sauce to a gentle simmer. Cook for 3 to 4 minutes until the sauce begins to thicken slightly.
  7. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  8. Add the fresh spinach to the sauce. Stir gently until the spinach wilts down, which takes about 1 to 2 minutes.
  9. Return the cooked chicken breasts to the skillet, nestling them into the creamy sauce. Spoon some sauce over the tops of the chicken.
  10. Serve this restaurant style chicken recipe immediately over pasta or with crusty bread.
