Make this incredibly creamy, comforting stovetop cheesy rice side dish in under 30 minutes. It uses sharp cheddar and Parmesan for rich flavor, making it a perfect quick weeknight side for chicken or steak.

  • 1 cup long grain white rice (not instant or brown)
  • 8 fluid ounces chicken broth
  • 8 fluid ounces whole milk
  • 3 tablespoons unsalted butter
  • 1/2 small onion, finely diced
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces sharp cheddar cheese, freshly grated
  • 1 ounce Parmesan cheese, freshly grated

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Add the diced onion and cook until soft, about 3 minutes.
  2. Add the long grain rice, paprika, salt, and pepper to the saucepan. Stir and cook for 1 minute until the rice is lightly toasted.
  3. Pour in the chicken broth and whole milk. Bring the mixture to a boil, then immediately reduce the heat to low, cover the pan, and simmer for 15 to 18 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
  4. Remove the saucepan from the heat. Let it stand, covered, for 5 minutes.
  5. Remove the lid. Stir the rice gently with a fork to fluff it.
  6. Add the grated sharp cheddar cheese and Parmesan cheese. Stir until the cheese is completely melted and the rice is creamy.
  7. Serve this ultimate comfort food rice immediately as a side dish.

  • For the creamiest texture, grate your own sharp cheddar cheese; pre-shredded cheese contains additives that prevent smooth melting.
