1 pound pasta (fettuccine or penne work well)
4 cups vegetable broth
1 cup heavy cream
4 cloves garlic, minced
5 ounces fresh spinach
1 cup grated Parmesan cheese
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Place the pasta, vegetable broth, minced garlic, salt, and pepper into a large pot or Dutch oven.
Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and cook, stirring often, until the pasta is nearly done, about 10-12 minutes. The liquid should reduce significantly.
Stir in the heavy cream and butter until the butter melts and the sauce begins to thicken slightly.
Add the fresh spinach to the pot. Stir continuously until the spinach wilts completely into the sauce, about 2 minutes.
Remove the pot from the heat. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
Serve immediately as your easy spinach pasta dinner.
Notes
For a richer flavor, substitute half of the vegetable broth with chicken broth.
If the sauce seems too thick after adding the cheese, add a splash of reserved pasta water or milk until you reach your desired consistency.
This recipe is a great base for adding cooked chicken or shrimp for extra protein.
