12 oz pasta
1 tbsp olive oil
3 cloves garlic, minced
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1/4 cup plain Greek yogurt
1/4 cup lemon juice
Zest of 1 lemon
Salt and black pepper to taste
Optional: cooked chicken or shrimp
Instructions
Cook pasta according to package directions. Reserve 1 cup of pasta water before draining.
While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
Stir in heavy cream, Parmesan cheese, Greek yogurt, lemon juice, and lemon zest. Cook, stirring, until the sauce is smooth and heated through.
Add the drained pasta to the skillet with the sauce. Toss to coat.
If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
Season with salt and pepper to taste.
Serve immediately, with optional chicken or shrimp if desired.
