Ingredients
Scale
1 (15 ounce) can black-eyed peas, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 cup frozen corn, thawed (or charred corn for extra flavor)
1 cup chopped Roma tomatoes
1 red bell pepper, chopped
1 green bell pepper, chopped
1/2 cup chopped red onion
1/2 cup chopped fresh cilantro
1 jalapeño pepper, seeded and minced (optional, for heat)
1/4 cup fresh lime juice
1/4 cup olive oil
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
Avocado, diced (for topping or mixing in just before serving)
Instructions
Prepare the vegetables: Chop the tomatoes, bell peppers, and red onion. Seed and mince the jalapeño if you are using it.
Combine the beans and corn: In a large bowl, mix the rinsed and drained black-eyed peas, black beans, and thawed corn.
Add the fresh vegetables: Add the chopped tomatoes, bell peppers, red onion, cilantro, and jalapeño to the bean mixture.
Make the zesty lime dressing: In a small bowl, whisk together the fresh lime juice, olive oil, ground cumin, salt, and black pepper until well combined.
Dress the caviar: Pour the dressing over the bean and vegetable mixture. Gently toss everything together until all ingredients are evenly coated.
Chill: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This step is important for the best flavor.
Serve: Just before serving, gently fold in the diced avocado. Serve this crowd pleaser dip with your favorite tortilla chips or as a healthy side dish.
Notes
This recipe is naturally gluten-free and vegetarian.
For a richer flavor, you can lightly char the corn kernels in a dry skillet before adding them.
If you prefer a tangier dressing, some cooks substitute Italian dressing for the lime juice and oil mixture, though the lime version is traditional for this fresh fiesta dip.
This makes a great potluck side dish or game day snack idea.
